It’s sweet. It’s savoury. It’s a little controversial… but it works
Ingredients:
- 4 large eggs
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- Salt & black pepper, to taste
- 4 slices of sourdough bread
- Modern Milkman raspberry jam
Method:
- Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, remove from the heat for 9–10 minutes
- Transfer the eggs to cold water, then peel and chop them into small pieces
- In a bowl, mix the chopped eggs with mayonnaise, Dijon mustard, salt, and pepper until creamy but still textured
- Lightly butter the bread, then spread a thick layer of raspberry jam onto one side of each slice.
- Spoon the egg salad generously over the jam-covered slices
- Top with the remaining bread, slice, and serve
