Egg Sandwich, with a Jammy twist

It’s sweet. It’s savoury. It’s a little controversial… but it works

Ingredients:

  • 4 large eggs
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt & black pepper, to taste
  • 4 slices of sourdough bread
  • Modern Milkman raspberry jam

Method:

  1. Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, remove from the heat for 9–10 minutes
  2. Transfer the eggs to cold water, then peel and chop them into small pieces
  3. In a bowl, mix the chopped eggs with mayonnaise, Dijon mustard, salt, and pepper until creamy but still textured
  4. Lightly butter the bread, then spread a thick layer of raspberry jam onto one side of each slice.
  5. Spoon the egg salad generously over the jam-covered slices
  6. Top with the remaining bread, slice, and serve
