Creamy Egg Salad
An egg-cellent idea for those extra boiled eggs – a creamy egg salad with a twist!
Ingredients:
- • x6 large eggs
- • x3 tablespoons of mayonnaise
- • x1 tablespoon of Dijon mustard
- • A sprinkle of chives
- • Salt and pepper
- • A pinch of paprika
- • Bacon (if you’re feeling adventurous)
Recipe:
- 1. Chuck your eggs in a saucepan and cover them with cold water. Bring to a boil, then simmer for 9 minutes for that perfect yolk consistency – not too runny, not too hard. Like Goldilocks, we’re going for just right.
- 2. Once boiled, plunge those eggs into cold water. It stops the cooking and makes them easier to peel. No one wants to wrestle with hot eggs!
- 3. Peel your eggs and give them a rough chop. You’re not looking for perfection here; a bit of chunkiness adds character!
- 4. In a bowl, mix your mayonnaise and Dijon mustard. Toss in your chopped eggs, chives, and if you’re feeling adventurous, some fried bacon. Gently stir to combine.
- 5. Add salt and pepper to taste. Be as generous or as stingy as you like. Sprinkle that pinch of paprika over the top for a pop of colour and a smoky hint.
- 6. You can serve this delicious egg salad on a bed of lettuce, as a sandwich filling, or with a side of crusty bread.
Easter Cake Recipes & Sweet Treats
The bit that you’ve all been waiting for… It wouldn’t be Easter without a few choccie eggs and sweet treats, right?
Corn Flake Tart
A timeless classic for a reason, our Corn Flake Tart is THE Easter cake recipe.

Ingredients:
- • 200g Corn Flakes
- • 150g of golden syrup
- • 100g of butter
- • 100g of dark chocolate
- • 100g of milk chocolate
- • A handful of mini chocolate eggs
Recipe:
- 1. In a large saucepan, gently melt the butter and golden syrup together. Keep the heat low; we don’t want any burnt surprises!
- 2. Once the butter and syrup are happily mingling, turn off the heat and usher in the corn flakes. Give them a good, gentle stir until they’re all coated in the syrupy goodness.
- 3. Press this mixture into a greased tart tin. Use the back of a spoon to pat it down and around the edges, creating a nest-like shape.
- 4. Break both types of chocolate into pieces (no nibbling!) and melt them together in a heatproof bowl set over a pan of simmering water. Stir occasionally until smooth.
- 5. Pour the melted chocolate over the corn flake base, smoothing it out to cover the top.
- 6. While the chocolate is still feeling melty, press the mini chocolate eggs into the top. Arrange them however you like – make it egg-stra special!
- 7. Pop the tart in the fridge to set for at least 1-2 hours.
- 8. Once set, slice your Easter Corn Flake Tart and serve.
Eggnog
For a festive Easter drink, why not whip up some homemade eggnog?
Ingredients:
- • 6 eggs, separated
- • 150g sugar
- • 1 pint of whole milk
- • 400ml fresh double cream
Recipe:
- 1. Grab a bowl and whisk together the egg yolks with 100g of sugar until they turn pale yellow in colour.
- 2. Stir in the milk and double cream, followed by a sprinkling of grated nutmeg.
- 3. In another bowl, use an electric mixer to whisk the egg whites until they’re foamy and opaque. Slowly add 50g of sugar while whisking until you get soft peaks.
- 4. Carefully fold the egg whites into your yolk mixture until combined.
- 5. Serve your homemade eggnog in glass tumblers with a sprinkle of freshly grated nutmeg on top.
