Oat-rageous Oat Drink Pancakes
What you’ll need…
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup oat drink
- 1 tbsp vegetable oil
- 1 tsp vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine your new favourite oat drink, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; a few lumps and bumps are completely fine!
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of oil.
- Pour 1/4 cup portions of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
- Get creative and serve the pancakes with your favourite toppings, such as fresh fruit, maple syrup, or a dollop of vegan butter.

What you’ll need…
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup oat drink
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the oat drink, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes or until a toothpick inserted into the centre comes out clean.
- Let your muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Resist the temptation to eat them all yourself, share them out with your family – maybe even put one aside for Nan- and finally, enjoy!

Almond Milk Banana Bread
What you’ll need…
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup almond milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, combine the mashed bananas, sugar, almond milk, vegetable oil, and vanilla extract.
- Gradually add the dry ingredients to the banana mixture and stir until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Cut you and your family a slice and tuck right in!
