Breakfast Cottage Cheese Wrap

The viral cottage cheese wrap just got a breakfast glow-up. Delicious way to add more protein into your breakfast routine.

Filled with smoky chorizo jam, juicy tomatoes, avocado, crispy Jolly Hog bacon, and a golden St Ewe egg, the perfect protein-packed start to the day! 

Ingredients:

For the wrap
1 cup Cottage Cheese
1 egg

For the filling
Chorizo jam
Tomato
Avocado
Bacon
1 egg

Method

Step 1
Preheat the oven to 180°C (160°C fan). Blend the cottage cheese and egg until smooth. Pour the mixture onto a lined and lightly oiled baking tray, spreading it into an even layer. Bake for 25–30 minutes, or until set and golden brown on top.

Step 2
While the wrap is baking, cook the bacon until crisp and prepare the egg to your liking. Slice the tomato and avocado.

Step 3
Once the cottage cheese wrap has cooled slightly, spread over the chorizo jam and layer with the bacon, egg, tomato and avocado. Roll up tightly, slice if desired, and enjoy.
