Lu’s Lemon Meringue Pie
Lemon meringue pie: a crisp crust filled with tangy lemon filling, topped with fluffy toasted meringue—a perfect balance of zesty and sweet. It serves 4-6 people per pie – tasty!
Ingredients:
- 375g Ready-made or Home-made Sweet Shortcrust Pastry
- 30g (¼ cup) Plain Flour
- 30g (¼ cup) Cornflour
- 250g (1 cup) Caster Sugar
- 185ml (¾ cup) Sicilian Lemonade
- 1 Tablespoon Grated Lemon Zest
- 50g Unsalted Butter, Chopped
- 6 Egg Yolks
- 1 Quantity Meringue
Recipe:
- Start by rolling out your pastry between 2 sheets of baking paper into a 30cm circle, then move it onto a plate. Re-roll the pastry trimmings and cut them into 3 10 x 2cm strips
- Grease a 25cm x 18cm x 2cm pie plate and wet the rim with water.
- Arrange the pastry strips around the edge and use your fingers to make a fancy swirling edge, before poking the base with a fork.
- Put the base in the fridge for 20 minutes. While waiting, put the oven temperature to 180°C.
- Blind-bake the pastry for 15 minutes. Remove the baking beads and bake for another 15-20 minutes or until its golden.
- After, let the pastry cool.
- Increase the temperature to 200°C.
- Throw sugar, flour, lemon juice and zest into a pan, before gradually adding 315 ml (¼ cup) water into a pan. Whisk it over medium heat until it’s nice and smooth.
- Now cook it for 2 minutes, whilst stirring, until the filling is nice and thick.
- Take it off the heat and whisk in the butter and egg yolks.
- Return to low heat and repeat step 9.
- Slather the lemon filling into the pastry base, then place the meringue on top. Pile it high in the centre and make peaks nto a knife.
- Bake for 8-10 minutes until it’s lightly browned.
- Finally, sit back and enjoy your delightful creation—a perfect lemon meringue pie!

Mr. White’s Spicy Margarita Cocktail & Mocktail
A spicy margarita packs a punch with tangy lime, smooth tequila, and a spicy kick from chili. It’s bold, refreshing, and fiery.
Ingredients:
- 60 ml Tequila
- 30ml Triple Sec
- 100ml Sicilian Lemonade
- 30ml Agave Syrup
- Chilli salt or Tajin
- Lime
- Ice
- Chill flakes (if desire)

Recipe:
- Prepare the glass by placing fresh lie around the rim. Then, add chilli salt or tajin over the rim so that it sticks to the outside of the glass.
- Add triple sec, tequila, sicilian lemonade, agave syrup and ice to a shaker.
- Shake vigorously and strain the mixture into prepared glass.
- Garnish with lime and sprinkle extra chilli flakes if desired.
- Enjoy your spicy margherita!
But if you want a non-alcoholic version…
Instead of using tequila, instead use mezcal. You will still be able to enjoy the lovely, flaming taste without any alcohol!
