We’re so pleased to introduce Mossgiel’s “brewed milk.” It’s organic, unhomogenised, and here’s the really lovely bit: it tastes different depending on when you drink it. Right now, in spring, it’s light and sweet, almost like melted ice cream. As the seasons shift and the colder months roll in, it becomes richer and more buttery. There’s a natural cream layer that sits on top of every bottle, which, if you haven’t seen that in a while, is honestly a bit of a moment.
So what is “brewed milk,” exactly?
It’s a fair question, because it’s not something you’ll find on most supermarket shelves. It’s not raw milk (which can’t be widely sold in the UK), but it’s about as close as you’ll get to what milk used to taste like before industrial processing changed everything.
The difference comes down to how it’s pasteurised. Most milk is heated to around 72°C for 15 seconds. Mossgiel takes a gentler approach, pasteurising at 68°C for five minutes. That lower temperature keeps more of the natural proteins and flavour intact, while still being completely safe. It also uses around 90% less energy than traditional methods, which feels like a proper win all round.
The milk is never homogenised, either. That’s the process that breaks down the fat molecules so everything looks uniform and the cream disappears into the mix. Without it, you get something with real texture and character. The kind of milk that genuinely changes your morning coffee.
The farm behind the bottle
Mossgiel is a family run organic dairy in East Ayrshire, and it’s run by a farmer called Bryce Cunningham. His herd is entirely grass fed on a natural, seasonal diet with no concentrates, no GMOs, no chemicals and no synthetic additives. That seaweed we mentioned? It provides natural iodine and supports the cows’ immunity, which all contributes to a beautifully clean, evolving flavour.
The farm practises regenerative agriculture, which means they’re actively building soil health and biodiversity rather than simply trying to minimise harm. They were also the first UK dairy to completely eliminate single use plastics. These are people who genuinely care about doing things properly, and you can taste it.
As Bryce says, people are looking for flavour, transparency and something that feels closer to the farm. Brewed milk is his answer to that curiosity, and honestly, we think he’s nailed it.
