There are lots of things you can do with your Christmas dinner leftovers. If you’re bored of turkey butties by now, you could experiment with a Christmas dinner pie or make a nice bubble and squeak with your leftover veggies. Our tried and tested bubble and squeak recipe makes a delicious all-day brunch.
Boxing Day bubble and squeak recipe
We won’t bother with quantities here. Just use whatever’s leftover and improvise.
- Mash your leftover roasties and combine them with any leftover mash potato in a large bowl. Chop your roasted veg up nice and fine and mix it in with the potatoes.
- Mix it all together with your fingers and add a little flour, a bit at a time, until the mixture becomes less sticky and you can form it into a big ball. Separate the big ball into smaller balls and coat them in flour.
- Pat the balls into flat patties on a wooden chopping board and dust with a little more flour. Heat some oil in a good non-stick pan. Add the patties to the pan and fry on a low heat.
- It’s tempting to turn them straight away, but be patient and allow the patties to seal. If you turn them too soon they’ll stick to the pan. Gently shuffle the pan to see if the patties move.
- When the patties start moving separately from the pan, it means they have sealed, and you can turn them with a flat spatula. Repeat the process on the other side. Keep turning them occasionally, and fry until they’re perfectly browned on both sides.
This bubble and squeak recipe is a traditional favourite that I think you’ll enjoy. If you’ve got any leftover sausages and bacon (chance would be a fine thing), you can fry them up too, with eggs and baked beans.
